Ingredients
1 cup long-grain white rice
2 cups chicken broth
1 tablespoon butter
2 tablespoons olive oil
3 cloves garlic, minced
2 cups fresh spinach
1 cup grated parmesan cheese
2 chicken breasts (or thighs)
1 teaspoon crushed red pepper flakes
Salt and black pepper to taste
Instructions
1. Season the chicken with garlic, red pepper flakes, salt, and pepper.
2. Heat olive oil in a skillet and sear the chicken on both sides until golden brown and fully cooked. Set aside.
3. In the same pan, melt butter and sauté minced garlic until fragrant.
4. Add rice and stir for a minute to toast slightly.
