Ingredients
1 pound gnocchi
1 cup pumpkin puree
3⁄4 cup heavy cream
2 garlic cloves, minced
1⁄2 cup grated parmesan cheese
1 tablespoon fresh sage, chopped
2 tablespoons butter
1⁄4 teaspoon ground nutmeg
Salt and pepper, to taste
Instructions
1. Melt the butter in a large skillet over medium heat. Add minced garlic and chopped sage, sauté for about 1 minute until fragrant.
2. Stir in pumpkin puree and heavy cream. Simmer gently for 5–6 minutes, then add parmesan, nutmeg, salt, and pepper. Let sauce thicken slightly.
3. While the sauce cooks, boil gnocchi in salted water according to package instructions (until they float). Drain well.
4. Add cooked gnocchi to the skillet. Toss gently to coat in sauce. Simmer for another 1–2 minutes to combine. Add a splash of pasta water if needed.
5. Serve hot with extra parmesan and cracked pepper.
Notes
Use shelf-stable or fresh gnocchi, but avoid overcooking to keep texture.
A sprinkle of chili flakes or cayenne adds a spicy kick.
Leftovers can be revived with a splash of cream or milk when reheating.
