Ingredients
1 pound ground beef
1 can Rotel tomatoes (10 oz), with green chilies
8 ounces pasta (penne, shells, or rotini)
4 ounces cream cheese
1 cup shredded cheddar cheese
1 cup milk or heavy cream
1 teaspoon garlic powder
1 teaspoon onion powder
Salt to taste
Black pepper to taste
1 tablespoon olive oil or butter
Instructions
1. Heat a large skillet over medium heat and add olive oil. Add ground beef and cook until browned, breaking it apart. Drain excess fat.
2. Stir in the Rotel tomatoes with juice and simmer for 2–3 minutes.
3. Add cream cheese and stir until melted. Pour in milk, then add garlic powder, onion powder, salt, and pepper. Mix well.
4. Cook pasta separately to al dente. Reserve some pasta water, then drain.
5. Add cooked pasta to the beef mixture. Stir in cheddar cheese until melted and creamy. Add pasta water if needed to loosen the sauce.
6. Serve hot with optional toppings like green onions or red pepper flakes.
Notes
Use any short pasta to capture the sauce.
Reserve some pasta water in case you need to thin the sauce.
Double the batch for meal prep or leftovers.
