Ingredients
4 chicken thighs (boneless, skinless)
1 cup long grain white rice
2 1/4 cups chicken broth
3/4 cup heavy cream
3 cloves garlic, minced
1 medium onion, finely chopped
2 tablespoons butter
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Season the chicken thighs with salt and pepper.
2. In a large skillet, heat olive oil and butter over medium-high heat. Sear chicken thighs for 4–5 minutes per side until golden brown. Remove and set aside.
3. In the same skillet, sauté chopped onion until translucent. Add minced garlic and cook for 1 more minute.
4. Stir in the rice. Add chicken broth and bring to a boil. Reduce heat to low and nestle chicken thighs back into the skillet.
5. Cover and simmer for 18–20 minutes until rice is cooked and chicken is tender.
6. Uncover, pour in heavy cream, and stir gently. Let it simmer uncovered for another 5 minutes until the sauce thickens.
7. Serve warm with fresh parsley or Parmesan if desired.

For extra richness, stir in a tablespoon of cream cheese.
You can swap in brown rice, but adjust liquid and cook time accordingly.
