Ingredients
1 tablespoon olive oil
1 pound ground turkey
1 medium onion, diced
3 cloves garlic, minced
1 can (15 ounces) pumpkin puree
1 can (15 ounces) white beans, drained and rinsed
1 can (14.5 ounces) diced tomatoes
2 cups chicken broth
4 ounces cream cheese, cubed
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add diced onion and sauté for 3 to 4 minutes until softened.
3. Stir in minced garlic and cook for another minute.
4. Add ground turkey, cooking and crumbling until no longer pink.
5. Stir in pumpkin puree, diced tomatoes, white beans, chicken broth, chili powder, cumin, salt, and pepper.
6. Bring to a low boil, then reduce heat and simmer uncovered for 15 minutes.
7. Add cubed cream cheese and stir until fully melted and the chili becomes creamy.
8. Serve hot with desired toppings like cheese, avocado, or sour cream.
Notes
Use canned pumpkin for convenience and creamy consistency.
Adjust chili powder to taste for more or less heat.
