Ingredients
1 lb ground beef
12 oz penne pasta
1 medium yellow onion, chopped
3 garlic cloves, minced
8 oz mushrooms, sliced
2 cups beef broth
1 cup sour cream
8 oz Velveeta cheese, cubed
1 tsp salt
1/2 tsp black pepper
2 tbsp olive oil
Instructions
1. Heat olive oil in a large skillet over medium heat. Add ground beef, season with salt and pepper, and cook until browned. Remove and set aside.
2. In the same skillet, add more olive oil if needed. Sauté onion until translucent. Add garlic and mushrooms and cook until mushrooms are browned and garlic is fragrant.
3. Return beef to skillet. Add beef broth and bring to a simmer. Let it reduce slightly.
4. Lower heat and stir in sour cream and Velveeta cheese. Mix until cheese is melted and sauce is creamy.
5. Meanwhile, cook penne pasta according to package directions until al dente. Drain well.
6. Add pasta to the sauce and stir to combine. Heat through and adjust seasoning if needed.
7. Serve hot. Garnish with parsley if desired.
Notes
Use freshly grated garlic for extra flavor.
A splash of broth or milk helps when reheating leftovers.
