Ingredients

1 pound fettuccine pasta

2 large chicken breasts (or thighs)

2 cups Velveeta cheese, cubed

1 cup heavy cream

4 garlic cloves, minced

2 tablespoons butter

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped parsley (for garnish)


Instructions

1. Boil a large pot of salted water and cook the fettuccine according to package directions until al dente. Drain and set aside, reserving a bit of pasta water.

2. Season the chicken with salt and pepper. In a skillet, heat olive oil over medium-high heat and sear the chicken until golden brown and cooked through. Let rest, then slice into strips.

3. In the same skillet, melt butter and sauté the minced garlic until fragrant. Add the heavy cream and bring it to a gentle simmer.

4. Stir in cubed Velveeta and continue stirring until smooth. Add Parmesan cheese and a splash of reserved pasta water if needed to loosen the sauce.

5. Add the sliced chicken and cooked fettuccine into the skillet. Toss gently to coat evenly in the sauce. Simmer for a minute to blend flavors.
