Ingredients
450g linguine
450g chicken breast or thighs, diced
200g Velveeta cheese, cubed
100g mozzarella cheese, shredded
3 garlic cloves, minced
2 tablespoons butter
1 cup heavy cream
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
1 tablespoon chopped parsley (optional)
Instructions
1. Boil a large pot of salted water and cook the linguine according to the package instructions. Drain and reserve 1/2 cup of the pasta water.
2. Heat olive oil in a large skillet over medium-high heat. Season the diced chicken with salt and pepper, then cook until golden brown and cooked through. Remove from skillet and set aside.
3. Lower the heat to medium and add butter to the same skillet. Once melted, stir in the minced garlic and sauté for about a minute until fragrant.
4. Pour in the heavy cream and bring to a gentle simmer. Add Velveeta cubes and stir until melted. Add mozzarella and stir until smooth. Use reserved pasta water to thin the sauce if needed.
5. Return the cooked chicken to the skillet. Add in the linguine and toss to fully coat the pasta in the cheesy sauce. Garnish with chopped parsley if desired and serve hot.

This dish is best served immediately while hot and creamy.
Use rotisserie chicken for a shortcut if you’re short on time.
