Creamy Velveeta Chicken Penne in Garlic Butter Parmesan Sauce is a fast and comforting pasta dinner recipe made with tender chicken, penne pasta, melted Velveeta cheese, and a savory garlic Parmesan sauce. It’s perfect for family meals, easy weeknight dinners, or make-ahead lunches.


Ingredients

1 pound penne pasta

2 boneless skinless chicken breasts

8 ounces Velveeta cheese, cubed

1/2 cup grated Parmesan cheese

3 tablespoons butter

4 garlic cloves, minced

1 cup heavy cream

1/2 cup chicken broth

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

2 tablespoons chopped parsley (optional)


Instructions

1. Bring a large pot of salted water to a boil. Cook the penne until al dente. Drain and reserve 1/2 cup of pasta water.

2. In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper. Cook until golden and fully done. Set aside to rest, then slice into strips.

3. In the same skillet, melt the butter. Add minced garlic and sauté for 1 minute until fragrant.

4. Add chicken broth and simmer for 2 minutes. Stir in heavy cream and heat through.

5. Add Velveeta cubes and stir until fully melted and smooth. Mix in Parmesan cheese.

6. Return cooked pasta and sliced chicken to the skillet. Toss to coat. Add pasta water if needed to loosen the sauce. Adjust salt and pepper to taste.

7. Garnish with chopped parsley if desired and serve immediately.

Notes

This pasta thickens as it sits; add broth or milk to loosen when reheating.

Great with additions like mushrooms, spinach, or red pepper flakes.

Use rotini or rigatoni if you don’t have penne.
