Ingredients
2 cups rotini pasta
2 cups cooked chicken breast, cubed or shredded
1 1/2 cups Velveeta cheese, cubed
1 cup shredded mozzarella cheese
2 cloves garlic, minced
2 tablespoons butter
1 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Bring a large pot of salted water to a boil. Cook rotini until al dente according to package directions. Drain and set aside.
2. If not using pre-cooked chicken, season chicken breast with salt and pepper. Cook in a skillet over medium heat until golden and cooked through. Dice or shred.
3. In a large skillet, melt butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
4. Stir in Velveeta cubes and pour in the milk. Stir continuously until Velveeta melts completely and the sauce becomes smooth.
5. Add mozzarella cheese and stir until melted into the sauce, creating a gooey and stretchy consistency.
6. Add cooked chicken and rotini pasta to the sauce. Stir well until everything is evenly coated.
7. Simmer for 2–3 minutes to allow flavors to combine.
8. Serve hot, garnished with extra mozzarella or herbs if desired.
