Ingredients
12 oz rotini pasta
2 boneless skinless chicken breasts
8 oz Velveeta cheese, cubed
1 cup shredded mozzarella cheese
3 cloves garlic, minced
1 cup heavy cream
2 tablespoons butter
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh chopped parsley
Instructions
1. Bring a large pot of salted water to a boil. Cook rotini pasta until al dente, drain, and set aside. Reserve 1/4 cup of pasta water.
2. Season chicken with salt and pepper. In a large skillet, heat olive oil and cook chicken until golden and cooked through. Slice into bite-sized pieces and set aside.
3. In the same skillet, melt butter and sauté garlic until fragrant.
4. Pour in the heavy cream and bring to a gentle simmer. Add Velveeta and stir until completely melted and smooth.
5. Stir in mozzarella cheese until sauce becomes creamy and stretchy.
6. Add cooked rotini to the sauce, tossing to coat. Add a splash of reserved pasta water if needed to loosen the sauce.
7. Return chicken to the pan, mix to combine, and garnish with parsley. Serve warm.
Notes
This dish is best served fresh, but leftovers reheat well with a splash of milk.
For added texture, top with toasted breadcrumbs before serving.
