Ingredients

2 tablespoons olive oil

1 medium onion diced

3 cloves garlic minced

1 teaspoon ground cumin

1 teaspoon chili powder

4 cups chicken broth

1 can diced green chiles 4 ounces

1 cup corn kernels

2 cups cooked shredded chicken

4 ounces cream cheese softened

1 cup heavy cream

1 1/2 cups shredded Monterey Jack cheese

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Heat olive oil in a large pot over medium heat. Add diced onion and cook for about 4 minutes until soft and translucent.

2. Add minced garlic and cook for about 30 seconds until fragrant.

3. Stir in cumin and chili powder and cook briefly to release the flavor of the spices.

4. Pour in chicken broth and add diced green chiles and corn. Stir well and bring the mixture to a gentle simmer.

5. Add the shredded cooked chicken and simmer for 5 minutes so the chicken absorbs the flavor of the broth.

6. Stir in the softened cream cheese and mix until fully melted and incorporated.

7. Pour in the heavy cream and stir to create a smooth creamy soup base.

8. Add shredded Monterey Jack cheese and stir until the cheese melts completely.

9. Season with salt and black pepper to taste. Let the soup simmer for another 5 minutes before serving.

Notes

Use rotisserie chicken to make this recipe faster and easier.

Top with avocado slices, tortilla strips, cilantro, or lime juice for extra flavor.

If the soup thickens when reheating, add a splash of chicken broth.
