Ingredients
1 head cauliflower
1 cup all-purpose flour
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
3/4 cup milk
1 1/2 cups panko breadcrumbs
olive oil spray
1/4 cup mayonnaise
1/4 cup Greek yogurt
2 garlic cloves minced
1 tablespoon lemon juice
1/4 teaspoon salt
1 tablespoon chopped parsley optional
Instructions
1. Cut the cauliflower into bite-sized florets and rinse them. Pat them completely dry.
2. In a bowl, mix together flour, garlic powder, paprika, salt, pepper, and milk until smooth.
3. Dip each floret into the batter and allow excess to drip off. Then coat it in panko breadcrumbs.
4. Arrange florets on a parchment-lined baking sheet and spray with olive oil.
5. Bake at 425°F for 25–30 minutes, flipping halfway through, until crispy and golden.
6. While baking, mix mayonnaise, Greek yogurt, garlic, lemon juice, salt, and parsley for the sauce.
7. Serve the cauliflower bites warm with the garlic sauce on the side.
Notes
Use fresh cauliflower for better texture.
Pat cauliflower very dry before battering.
Customize with chili flakes or parmesan for extra flavor.
