Ingredients

1 lb boneless chicken breasts or thighs

1 cup all-purpose flour

1/2 cup cornstarch

2 large eggs

1 1/2 cups Panko breadcrumbs

1 tablespoon Cajun seasoning

3 tablespoons butter (divided)

1 1/2 cups heavy cream

1 cup grated Parmesan cheese

1 cup roasted corn kernels

12 oz twisted pasta (rotini or gemelli)

Salt and pepper to taste


Instructions

1. Cut chicken into bite-sized pieces.

2. Dredge in flour and cornstarch, then dip in beaten eggs.

3. Coat with Panko breadcrumbs mixed with Cajun seasoning.

4. Fry chicken pieces in hot oil until golden brown and crispy. Set aside.

5. In a skillet, add 1 tablespoon butter and corn kernels. Roast until lightly charred. Remove from heat.

6. Boil twisted pasta in salted water until al dente. Drain and set aside.

7. In a skillet, melt 2 tablespoons butter. Stir in Cajun seasoning, then add heavy cream. Simmer until thickened.

8. Whisk in Parmesan until the sauce is creamy and smooth.

9. Add roasted corn and pasta to the sauce. Stir to coat evenly.

10. Serve pasta with crispy chicken bites on top. Garnish with Parmesan or chopped parsley.

Notes

This dish is best served immediately with the chicken on top to keep it crispy.

Store leftovers by separating chicken and pasta to maintain texture.
