This Sunday Dinner Slow Cooker Beef Ragu is rich, hearty, and packed with flavor. Made with tender beef chuck roast, tomatoes, and red wine, this easy crockpot ragu is perfect for feeding a family or meal prepping. A cozy slow-cooked beef pasta sauce for your next comfort meal.
Ingredients
2.5 lbs beef chuck roast
1 large yellow onion, chopped
4 garlic cloves, minced
28 oz crushed tomatoes
2 tbsp tomato paste
1 cup dry red wine
1 cup beef broth
2 bay leaves
1 tsp fresh thyme or 1 tsp Italian seasoning
1.5 tsp salt
1 tsp black pepper
1 tbsp olive oil
Instructions
1. Heat olive oil in a skillet over medium-high heat. Sear the beef on all sides until browned.
2. Remove beef and set aside. Add chopped onions and garlic to the same skillet, sauté until fragrant, about 2 minutes.
3. Transfer seared beef, onions, and garlic to the slow cooker.
4. Add crushed tomatoes, tomato paste, red wine, beef broth, bay leaves, thyme or seasoning, salt, and pepper.
5. Cover and cook on low for 8 hours or high for 4-5 hours until beef is tender.
6. Remove beef, shred with two forks, and return to the pot.
7. Let it simmer uncovered for 15-20 minutes to thicken the sauce.
8. Serve hot over pasta, polenta, or mashed potatoes. Garnish with parsley or Parmesan if desired.
Notes
This ragu is even better the next day after flavors meld.
You can freeze leftovers for up to 3 months in airtight containers.
Make sure to use a good quality red wine for depth of flavor.
