Ingredients
2 cups frozen hashbrowns (thawed and patted dry)
1/2 pound breakfast sausage
1 cup shredded cheddar cheese
2 large eggs
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped parsley (optional)
Instructions
1. Cook the breakfast sausage in a skillet over medium heat until browned and cooked through. Drain the grease and let it cool slightly.
2. In a large mixing bowl, combine the hashbrowns, cooked sausage, cheddar cheese, eggs, garlic powder, onion powder, salt, and pepper. Mix well until evenly combined.
3. Preheat the oven to 400°F and grease a mini muffin tin generously.
4. Scoop the mixture into the muffin cups and press down slightly to pack them in.
5. Bake for 20 to 25 minutes or until the tops and edges are golden and crispy.
