Description

Ingredients

2 pounds beef chuck roast, cut into chunks

1 large yellow onion, sliced

3 cloves garlic, minced

8 ounces mushrooms, sliced

2 cups beef broth

2 tablespoons Worcestershire sauce

4 ounces cream cheese

1 cup sour cream

12 ounces egg noodles

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Cut the beef into bite-sized chunks and season with salt and pepper.

2. Slice the onion and mushrooms, mince the garlic.

3. Place beef in the crock pot, then top with onions, mushrooms, and garlic.

4. Pour in beef broth and Worcestershire sauce.

5. Cover and cook on low for 7–8 hours or high for 4–5 hours, until beef is tender.

6. Stir in cream cheese and let it melt, then add sour cream and mix well.

7. Boil egg noodles according to package directions, then drain.

8. Add cooked noodles to the crock pot or serve beef mixture over noodles.

9. Garnish with fresh parsley if desired and serve warm.

Notes

For richer flavor, sear the beef before adding it to the crock pot.

Use full-fat sour cream for a creamier texture.

Add a splash of white wine or Dijon mustard to enhance the sauce.
