Crock Pot Cheesy Chicken Spaghetti is a creamy, comforting slow cooker pasta recipe loaded with tender shredded chicken, cheddar cheese, cream cheese, and Rotel tomatoes. Perfect for busy weeknights, this family favorite is an easy set-it-and-forget-it dinner packed with rich Southern flavor.
Ingredients
1.5 pounds boneless skinless chicken breasts
8 ounces cream cheese
2 cups shredded cheddar cheese
1 can (10 oz) Rotel tomatoes
1 can (10.5 oz) cream of chicken soup
2 cups chicken broth
8 ounces spaghetti noodles
1 teaspoon garlic powder
1 teaspoon onion powder
0.5 teaspoon salt
0.5 teaspoon black pepper
Instructions
1. Place the chicken breasts in the bottom of the slow cooker. Add cream cheese, Rotel, cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and pepper.
2. Cover and cook on low for 6 hours or high for 3–4 hours.
3. Remove the chicken and shred it using two forks. Return shredded chicken to the crock pot and stir to combine.
4. Add the shredded cheddar cheese and stir until melted and creamy.
5. Cook spaghetti noodles on the stovetop according to package directions until al dente. Drain.
6. Fold the cooked spaghetti into the crock pot mixture and stir to coat.
7. Let everything warm together for 10 minutes before serving.
Notes
Use pre-cooked rotisserie chicken for a shortcut.
Add diced mushrooms or bell peppers for extra texture.
Top with parsley or extra cheese when serving for presentation.
