Description

Ingredients

1 lb chicken breast or thighs, cooked and sliced

4 cups shredded cabbage

1 cup shredded carrots

3 green onions, sliced

1 cup crunchy chow mein noodles

2 tablespoons sesame seeds

1/4 cup chopped cilantro (optional)

1/3 cup sesame oil

2 tablespoons rice vinegar

2 tablespoons soy sauce

1 tablespoon honey

1 garlic clove, minced

1/2 teaspoon grated fresh ginger


Instructions

1. Season chicken with salt, pepper, and a splash of sesame oil, then grill or cook until fully done. Let rest, then slice thinly.

2. Shred cabbage and carrots. Slice green onions and chop cilantro if using. Combine all veggies in a large bowl.

3. In a small bowl or jar, mix sesame oil, rice vinegar, soy sauce, honey, garlic, and ginger. Whisk or shake until smooth.

4. Add chicken to the vegetables. Pour the dressing over and toss everything together.

5. Top with sesame seeds and chow mein noodles. Serve immediately or store components separately for later.

Notes

Use rotisserie chicken if youโ€™re short on time.

Keep the dressing and noodles separate when storing to maintain freshness.
