Ingredients

1 ½ cups graham cracker crumbs

¼ cup brown sugar

½ cup melted butter

3 (8 oz) packages cream cheese

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

½ cup sour cream

1 cup brown sugar (for topping)

⅔ cup corn syrup

¼ cup butter (for topping)

1 ½ cups chopped pecans

Pinch of salt


Instructions

1. Preheat the oven to 325°F.

2. Mix graham cracker crumbs, brown sugar, and melted butter. Press into a springform pan. Bake for 10 minutes and let cool.

3. In a bowl, beat cream cheese and granulated sugar until smooth.

4. Add eggs one at a time, mixing well.

5. Mix in sour cream and vanilla extract until combined.

6. Pour filling over the crust.

7. Wrap the pan in foil and place in a water bath. Bake for 60–70 minutes.

8. Turn off oven, crack the door, and let cheesecake cool for 1 hour.

9. In a saucepan, heat brown sugar, corn syrup, butter, and salt until sugar dissolves.

10. Stir in chopped pecans and remove from heat.

11. Pour pecan topping over cooled cheesecake.

12. Chill the cheesecake for at least 4 hours or overnight.

Notes

Use a deep-dish springform pan to hold all the layers securely.

Let the cheesecake fully chill before slicing to get clean cuts.

Toasting the pecans beforehand intensifies their flavor beautifully.
