Ingredients
2 cups all-purpose flour
1 cup granulated sugar
1 cup brown sugar
1 teaspoon baking soda
1 tablespoon ground cinnamon
0.5 teaspoon salt
1.5 cups vegetable oil
3 large eggs
2 teaspoons vanilla extract
3 cups apples, peeled and chopped
1 cup pecans or walnuts (optional)
Instructions
1. Preheat your oven to 325°F and generously grease a Bundt pan with butter or nonstick spray. Lightly flour it for easy release.
2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking soda, cinnamon, and salt.
3. Add in the oil, eggs, and vanilla extract. Mix until the batter is smooth.
4. Gently fold in the chopped apples and nuts, if using. The batter will be thick.
5. Pour the batter into the prepared Bundt pan and spread evenly.
6. Bake for 60 to 70 minutes, or until a toothpick inserted comes out clean.
7. Allow the cake to cool in the pan for 15 minutes, then invert onto a wire rack to cool completely.
8. Drizzle with powdered sugar glaze or cream cheese glaze if desired.
Notes
This cake tastes even better the next day as the flavors develop.
Make sure to finely chop apples for even distribution.
