Ingredients
1 tablespoon olive oil
1 small yellow onion, diced
3 garlic cloves, minced
1 pound ground beef
1 teaspoon Italian seasoning
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups orzo pasta
1 can (15 ounces) crushed tomatoes
3 cups beef broth
2 tablespoons fresh parsley, chopped (optional)
Instructions
1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 3 minutes until softened.
2. Stir in the minced garlic and cook for 1 minute until fragrant.
3. Add the ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed.
4. Stir in the Italian seasoning, paprika, salt, and pepper. Add the orzo and toast lightly for 1-2 minutes.
5. Pour in the crushed tomatoes and beef broth. Stir well and bring to a gentle boil.
6. Reduce the heat, cover the skillet, and let it simmer for 12-15 minutes, stirring occasionally, until the orzo is tender.
7. Remove from heat and let it sit, covered, for 5 minutes to absorb remaining liquid.
8. Stir again, garnish with chopped parsley if desired, and serve hot.
Notes
Orzo absorbs liquid quickly, so don’t overcook or it may become too soft.
You can substitute turkey or chicken for a lighter version.
