1 lb lobster meat
1 sheet puff pastry
3 tbsp butter
2 shallots, finely chopped
2 garlic cloves, minced
2 carrots, diced
2 celery stalks, diced
3 tbsp all-purpose flour
1 cup seafood or chicken broth
1 cup heavy cream
2 tbsp dry sherry (optional)
1 tsp salt
1/2 tsp black pepper
1 tsp fresh thyme leaves
1 egg, beaten (for egg wash)
Instructions
1. In a large skillet, melt butter over medium heat. Add shallots, garlic, carrots, and celery. Cook until softened, about 5 minutes.
2. Sprinkle flour over the vegetables and stir continuously for 1 minute.
3. Slowly whisk in the broth and cream until smooth. Add sherry, if using, and simmer until the sauce thickens slightly.
4. Gently fold in lobster meat and thyme. Season with salt and black pepper. Remove from heat.
