Ingredients
1.5 lbs boneless skinless chicken breasts
4 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
0.75 cup grated parmesan cheese
0.5 cup chopped sun-dried tomatoes
1 teaspoon Italian seasoning
0.5 teaspoon salt
0.25 teaspoon black pepper
3 cups fresh spinach
Instructions
1. Place chicken breasts in the bottom of your slow cooker. Season with salt, pepper, and Italian seasoning. Add minced garlic on top.
2. Pour in the chicken broth and heavy cream, then add the chopped sun-dried tomatoes over the chicken.
3. Cover and cook on low for 5 to 6 hours until the chicken is tender and fully cooked.
4. Use two forks to shred the chicken directly in the slow cooker.
5. Stir in the grated parmesan cheese and fresh spinach. Cover and cook for another 20–30 minutes, until the spinach wilts and everything is creamy and well combined.
6. Give it a final stir and serve over pasta, mashed potatoes, rice, or with crusty bread.

Serve with a starch to soak up the creamy sauce like mashed potatoes or egg noodles.
