Description

Ingredients

1 cup unsalted butter

1 cup granulated sugar

1/2 cup light brown sugar

1/4 cup water

1 tablespoon light corn syrup

1/4 teaspoon salt

12 ounces white chocolate

1 tablespoon ground cinnamon

1/3 cup additional granulated sugar (for topping)


Instructions

1. In a heavy-bottom saucepan, combine butter, granulated sugar, brown sugar, corn syrup, water, and salt.

2. Stir constantly over medium heat until the mixture reaches 290°F (hard crack stage).

3. Immediately pour the toffee mixture onto a parchment-lined baking sheet and spread it evenly. Let cool completely.

4. Break or cut the cooled toffee into pieces.

5. Melt white chocolate in a double boiler or microwave in short bursts, stirring until smooth.

6. Dip each piece of toffee into melted white chocolate, coating both sides.

7. In a small bowl, mix cinnamon and additional sugar.

8. While the chocolate is still wet, sprinkle or press each piece into the cinnamon sugar mixture on all sides.

9. Place coated toffee on parchment and let chocolate set completely.

10. Store in an airtight container at room temperature for up to two weeks.

Notes

Make sure the toffee reaches 290°F or it won’t set properly.

Use high-quality white chocolate for the smoothest coating.

Sprinkle extra cinnamon sugar while chocolate is still wet for maximum flavor.
