Easter Bunny Coconut Tails are soft, sweet coconut balls made with sweetened shredded coconut and condensed milk. These no-bake Easter treats are easy to make, kid-friendly, and perfect for spring dessert tables. Make-ahead and freezer-friendly!
Ingredients
2 cups sweetened shredded coconut
7 ounces sweetened condensed milk
1 teaspoon vanilla extract
1 cup powdered sugar
4 ounces white chocolate (optional, for coating or drizzle)
Instructions
1. In a large bowl, combine the shredded coconut, condensed milk, vanilla extract, and powdered sugar. Mix until everything is well combined and forms a thick mixture.
2. Scoop out small portions using a cookie scoop or spoon and roll into 1-inch balls. Place them on a parchment-lined baking sheet.
3. Chill the coconut balls in the refrigerator for at least 30 minutes to help them set.
4. If desired, melt the white chocolate and either drizzle it over the coconut tails or dip the bottoms of each one. Let them set completely.
5. Serve immediately or store in an airtight container in the refrigerator for up to 1 week.

You can color the coconut with pastel food coloring for fun variations.
