Ingredients
1 pound chicken breast
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
2 tablespoons cornstarch
2 tablespoons olive oil
2 tablespoons butter
3 cloves garlic, minced
1/3 cup buffalo hot sauce
Instructions
1. Cut chicken into 1 to 1.5-inch bite-sized pieces. Pat dry with paper towels.
2. Season chicken with salt, pepper, and garlic powder. Toss with cornstarch until well coated.
3. Heat olive oil in a skillet over medium-high heat. Cook chicken in a single layer for 4-5 minutes per side until golden and cooked through. Work in batches if needed.
4. In a separate saucepan, melt butter over low heat. Add minced garlic and sauté for 1 minute. Add buffalo sauce and stir until heated through.
5. Return cooked chicken to the pan. Pour sauce over the chicken and toss to coat. Let cook for 1-2 more minutes to thicken.
6. Serve hot with celery sticks, ranch or blue cheese dressing.
Notes
Always pat the chicken dry to help it sear better and stay crispy.
Use fresh garlic for maximum flavor impact in the sauce.
Don’t overcrowd the pan when searing—it helps the chicken stay golden, not soggy.
