Ingredients
2 cups cooked chicken breast or rotisserie chicken
1 can refrigerated biscuit dough
4 cups chicken broth
1 can cream of chicken soup
1 cup milk
2 tablespoons butter
1 medium onion, chopped
2 carrots, sliced
2 celery stalks, sliced
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
Instructions
1. In a large pot, melt butter over medium heat. Add onion, carrots, and celery. Cook for 5–7 minutes until softened.
2. Stir in garlic and thyme. Cook for 1 more minute until fragrant.
3. Pour in chicken broth, cream of chicken soup, and milk. Stir until smooth. Bring to a gentle simmer.
4. Add shredded chicken. Let it heat through for about 5 minutes.
5. Cut each biscuit into quarters or sixths. Drop into the simmering pot without stirring.
6. Cover and simmer for 15–20 minutes until dumplings are cooked through and puffed.
7. Taste and season with salt and pepper as needed. Serve hot.
