Ingredients

200g chicken breast

200g lo mein noodles

3 tablespoons soy sauce

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

1 red bell pepper, sliced

1 medium carrot, julienned

100g snow peas

2 green onions, chopped


Instructions

1. Slice the chicken breast into thin strips and chop all vegetables. Measure out sauce ingredients and set aside.

2. Cook the lo mein noodles in boiling water according to package instructions until almost done. Drain and toss with a little sesame oil to prevent sticking.

3. In a large skillet or wok, heat a bit of oil over medium-high heat. Add the chicken and cook until golden and fully cooked. Remove and set aside.

4. In the same skillet, stir-fry garlic and ginger for 30 seconds. Add the bell pepper, carrots, and snow peas. Cook until just tender but still crisp.

5. Return chicken to the pan, add noodles and sauce, and toss to combine. Stir-fry for 2 to 3 minutes until everything is heated through and coated in sauce.

6. Garnish with green onions and serve hot.

Notes

Use fresh or dried lo mein noodlesโ€”both work well.

Adjust soy sauce or add chili flakes for more heat.

Leftovers can be stored for 3 days and taste great reheated.
