This Easy Cranberry Fluff Salad is a creamy, no bake holiday side dish made with fresh cranberries, crushed pineapple, marshmallows, and whipped topping. Ingredients
1 cup fresh cranberries finely chopped
1/2 cup granulated sugar
1 can 20 oz crushed pineapple well drained
2 cups mini marshmallows
1 container 8 oz whipped topping thawed
1/2 cup chopped walnuts or pecans optional
Instructions
1. Rinse the cranberries and pulse them in a food processor until finely chopped but not pureed.
2. Transfer cranberries to a bowl, stir in the sugar, and refrigerate for 1 hour to soften and balance the tart flavor.
3. In a large mixing bowl, combine the sweetened cranberries with the drained crushed pineapple.
4. Stir in the mini marshmallows and chopped nuts if using.
5. Gently fold in the whipped topping until fully combined and fluffy.
6. Cover and refrigerate for at least 2 hours before serving to allow flavors to blend and marshmallows to soften.
Notes
The cranberry mixture can be made a day ahead for deeper flavor.
Be sure to drain the pineapple thoroughly to prevent excess moisture.
For extra brightness, add 1 teaspoon fresh orange zest.
