Ingredients
2 cups cheese tortellini
2 cups cooked shredded chicken
1 cup Velveeta cheese, cubed
1 cup shredded mozzarella cheese
2 cloves garlic, minced
2 tablespoons butter
1 cup chicken broth
1 cup heavy cream
1 teaspoon Italian seasoning
Salt and pepper, to taste
Instructions
1. In a large pot over medium heat, melt the butter and sauté the minced garlic for about 1 minute until fragrant.
2. Add chicken broth and heavy cream. Stir in Velveeta cubes and let them melt completely, stirring until smooth.
3. Stir in cheese tortellini and let simmer for 5 to 7 minutes until tender.
4. Add the shredded chicken and mozzarella cheese. Stir until fully melted and the sauce thickens.
5. Season with Italian seasoning, salt, and pepper. Stir to combine and serve hot straight from the pot.
Notes
You can use rotisserie chicken for ease and extra flavor.
If the sauce thickens too much when reheating, add a splash of broth or cream.
Frozen tortellini works well—just adjust cooking time slightly.
