Ingredients

1 lb chicken breast, cut into bite-sized pieces

1 cup grated parmesan cheese

1 cup breadcrumbs

1 tsp garlic powder

1 tsp paprika

1 tsp salt

1 tsp black pepper

2 large eggs

1 cup heavy cream

2 tbsp butter

2 cloves garlic, minced

1 tsp Cajun seasoning

1 tsp smoked paprika

1/4 cup grated parmesan (for sauce)

2 oz cream cheese


Instructions

1. Cut chicken breasts into bite-sized chunks and pat them dry. Season lightly with salt and pepper.

2. In one bowl, beat the eggs. In another, combine breadcrumbs, grated parmesan, garlic powder, and paprika.

3. Dip each chicken piece into the egg mixture, then coat in the parmesan breadcrumb mixture. Press to adhere.

4. Heat a skillet with oil over medium-high heat. Cook the chicken bites in batches until golden and crispy on all sides, about 3-4 minutes per side. Remove and drain on paper towels.

5. In a saucepan, melt butter over medium heat. Add minced garlic and cook until fragrant.

6. Stir in heavy cream, cream cheese, Cajun seasoning, smoked paprika, and grated parmesan. Whisk until smooth and thickened.
