Description

This Easy Garlic-Parmesan Chicken Bites recipe is loaded with crispy garlic-parmesan crust, smothered in a smoky sun-dried tomato Cajun Alfredo sauce, and served with charred broccolini. Ingredients

1.5 lbs boneless skinless chicken breasts

4 cloves fresh garlic, minced

1 cup parmesan cheese, grated

1 cup panko breadcrumbs

1 tablespoon Cajun seasoning

1⁄2 cup sun-dried tomatoes, chopped

1 cup heavy cream

3 tablespoons butter

2 tablespoons olive oil

1 bunch broccolini

Salt, to taste


Instructions

1. Cut chicken breasts into bite-sized chunks. In a bowl, mix grated parmesan, panko breadcrumbs, and minced garlic. Toss chicken pieces to coat thoroughly.

2. In a large skillet over medium-high heat, heat olive oil and 1 tablespoon of butter. Add coated chicken in a single layer. Sear until golden and cooked through, about 3–4 minutes per side. Remove and set aside.

3. Lower heat to medium. In the same skillet, add 1 tablespoon butter, garlic, and sun-dried tomatoes. Sauté until fragrant. Stir in Cajun seasoning and heavy cream. Simmer for 4–5 minutes until thickened. Add the chicken back to coat in sauce.

4. In a separate hot pan, heat olive oil and cook broccolini until lightly charred but still crisp, about 5 minutes. Season with salt.

5. Plate chicken over pasta, rice, or roasted potatoes. Spoon extra sauce on top. Serve with charred broccolini.

Notes

This recipe serves 4 people generously.

To reheat, add a splash of cream to restore the Alfredo texture.

You can substitute shrimp or tofu for the chicken.
