Ingredients
1 pound ground turkey
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon smoked paprika
1 teaspoon fennel seeds
½ teaspoon dried thyme
½ teaspoon dried sage
¼ teaspoon crushed red pepper flakes (optional)
½ teaspoon garlic powder
½ teaspoon onion powder
Instructions
1. In a small bowl, mix salt, black pepper, smoked paprika, fennel seeds, thyme, sage, red pepper flakes (optional), garlic powder, and onion powder.
2. Place ground turkey in a large mixing bowl. Sprinkle seasoning blend over the meat.
3. Gently mix the turkey and spices until just combined. Do not overmix.
4. Heat a skillet over medium heat with a little oil. Form sausage into patties or crumble directly into the pan.
5. Cook for 4–5 minutes per side for patties, or until fully browned and cooked through if crumbled.
6. Taste and adjust seasoning as needed. Serve hot or store for later.
Notes
Use turkey with some fat for better flavor and texture.
Don’t overwork the meat or it may become tough.
Adjust heat with more or less crushed red pepper to your taste.
