Description

This Easy Italian Apple Cake is a simple, moist dessert filled with chunks of fresh apples. A rustic torta di mele perfect for fall, made with pantry staples and no fuss. The best apple cake recipe with a hint of vanilla, ideal for any time of day.


Ingredients

2 cups all-purpose flour

2 teaspoons baking powder

1/4 teaspoon salt

3/4 cup granulated sugar

2 large eggs

1/2 cup milk

1/2 cup vegetable oil

1 teaspoon vanilla extract

2 medium apples peeled and chopped

1 tablespoon lemon juice

powdered sugar for dusting (optional)


Instructions

1. Peel, core, and chop the apples into small chunks. Toss with lemon juice and set aside.

2. In a large bowl, whisk together the flour, baking powder, and salt.

3. In another bowl, beat sugar and eggs until creamy. Add milk, oil, and vanilla extract.

4. Gradually fold dry ingredients into the wet mixture until combined.

5. Stir in most of the apple chunks, saving some for the top.

6. Pour the batter into a greased 9-inch round cake pan and top with remaining apples.

7. Bake at 350°F (175°C) for 45 to 50 minutes until a toothpick inserted comes out clean.

8. Let cool in pan, then dust with powdered sugar before serving.

Notes

This cake is best made with firm, slightly tart apples like Granny Smith or Honeycrisp.

Don’t overmix the batter to keep the crumb light and fluffy.

Optional toppings like cinnamon or raisins can be added for extra flavor.
