Description

These Easy Jello Meringue Cookies are crisp, light, and bursting with fruity flavor thanks to flavored Jello mix. A gluten-free, low-fat, and colorful dessert perfect for parties, holidays, or gifting. Customize with your favorite Jello flavors for a twist on classic meringue cookies.


Ingredients

3 large egg whites

⅔ cup granulated sugar

1 package (3 oz) flavored Jello mix (any flavor)

¼ teaspoon cream of tartar

½ teaspoon vanilla extract


Instructions

1. Preheat your oven to 225°F and line two baking sheets with parchment paper. Ensure your mixing bowl and beaters are completely clean and dry.

2. In a large mixing bowl, beat the egg whites and cream of tartar on medium speed until frothy.

3. Gradually add the sugar, one tablespoon at a time, while continuing to beat until soft peaks form.

4. Add the Jello powder and vanilla extract. Beat until stiff peaks form and the meringue is glossy.

5. Pipe or spoon small mounds of meringue onto the baking sheets, leaving space between each.

6. Bake for 1 hour, then turn off the oven and leave the cookies inside for another hour to fully dry.

7. Let cookies cool completely at room temperature. Store in an airtight container away from humidity.

Notes

Use any Jello flavor—raspberry, lime, lemon, or even mango.

For best results, avoid making meringue on humid days.

Store with a few grains of rice to help absorb moisture and keep cookies crisp.
