Description

Easy Lemon Blueberry Cheesecake Trifle is a creamy, no-fuss dessert layered with soft cake, fluffy lemon cheesecake filling, and juicy blueberries for a bright and refreshing treat. This lemon blueberry trifle is perfect for spring parties, summer gatherings, Easter dessert tables, and make-ahead entertaining.

Ingredients

2 packages cream cheese, softened

1 cup powdered sugar

1 cup lemon curd

2 tablespoons fresh lemon juice

1 tablespoon lemon zest

1 teaspoon vanilla extract

2 cups whipped topping

1 loaf pound cake, cut into cubes

3 cups fresh blueberries

1 tablespoon extra lemon zest, for garnish

4 thin lemon slices, for garnish

Instructions

1. Beat the softened cream cheese in a large bowl until completely smooth.

2. Add the powdered sugar, lemon curd, fresh lemon juice, lemon zest, and vanilla extract, then mix until creamy and fully combined.

3. Fold the whipped topping into the lemon mixture gently until light and fluffy.

4. Cut the pound cake into bite-sized cubes and set aside.

5. Add a layer of cake cubes to the bottom of a trifle dish or large glass bowl.

6. Spoon a layer of lemon cheesecake filling over the cake.

7. Scatter a layer of fresh blueberries over the filling.

8. Repeat the layers until all ingredients are used, finishing with a layer of filling on top.

9. Garnish with extra blueberries, lemon zest, and thin lemon slices.

10. Cover and chill for at least 2 hours before serving.

Notes

A pound cake gives this trifle a richer texture, but angel food cake works well for a lighter version.

For the best layers, make sure the cream cheese is fully softened before mixing.

This dessert tastes even better after chilling because the layers settle and the flavors blend beautifully.
