Ingredients
8 oz cheddar cheese, cubed
1/2 cup pepperoni slices, halved
1/2 cup baby dill pickles, halved
1/4 cup red onion, thinly sliced
1/3 cup olive oil
3 tbsp white wine vinegar
1 tsp Italian seasoning
1/4 tsp crushed red pepper flakes (optional)
1 tbsp fresh parsley, chopped
Instructions
1. In a bowl, whisk together olive oil, white wine vinegar, Italian seasoning, red pepper flakes, salt, and pepper. Set aside.
2. Cube the cheddar cheese and halve the pepperoni and pickles. Slice the red onion thinly.
3. In a container with a lid, layer the cheese, pepperoni, pickles, and onion.
4. Pour the marinade over everything and stir gently to coat.
5. Cover and refrigerate for at least 4 hours, or overnight for best flavor.
6. Stir gently before serving and garnish with chopped fresh parsley.
Notes
