Ingredients
4 tablespoons butter
1 tablespoon olive oil
16 ounces mushrooms, sliced (baby bella or white)
2 cloves garlic, minced
3 tablespoons all-purpose flour
2 1/2 cups vegetable broth
1 tablespoon soy sauce
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme (or 1 teaspoon fresh thyme)
Instructions
1. Heat butter and olive oil in a skillet over medium heat.
2. Add sliced mushrooms and cook until browned and their moisture is released, about 8–10 minutes.
3. Stir in the minced garlic and cook for 1–2 minutes until fragrant.
4. Sprinkle in flour, stir to coat mushrooms, and cook for 2–3 minutes.
5. Slowly whisk in vegetable broth to prevent lumps.
6. Add soy sauce, salt, pepper, and thyme. Stir and simmer for 5–7 minutes until thickened.
7. Taste and adjust seasoning as needed. Serve warm.
Notes
Always sauté the mushrooms until golden for the richest flavor.
Add a splash of white wine before the broth for a gourmet twist.
