Ingredients
2 pounds beef chuck roast, cut into chunks
4 gold potatoes, chopped
4 carrots, peeled and chopped
2 stalks celery, chopped
1 large onion, chopped
3 cloves garlic, minced
4 cups beef broth (low sodium)
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 bay leaf
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons cornstarch
3 tablespoons cold water
Instructions
1. Heat oil in a skillet and sear beef chunks on all sides until browned.
2. Chop potatoes, carrots, celery, and onion into hearty pieces.
3. Add seared beef, vegetables, garlic, broth, tomato paste, Worcestershire sauce, thyme, bay leaf, salt, and pepper into crockpot. Stir well.
4. Cover and cook on low for 7-8 hours or on high for 4-5 hours until beef is tender.
5. Mix cornstarch with cold water and stir into stew during last 30 minutes. Cook uncovered until thickened.
Notes
This stew tastes even better the next day.
You can add frozen peas during the last 15 minutes for added color.
Red wine (¼ cup) adds depth if you’d like to mix it in with the broth.
