Ingredients
6 boneless skinless chicken thighs
1 pound baby potatoes, halved
3 carrots, sliced into thick coins
1 yellow onion, chopped
3 cloves garlic, smashed
1 ½ cups chicken broth
2 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon salt
½ teaspoon black pepper
Instructions
1. Wash and halve the baby potatoes, slice the carrots, and chop the onion. Place them into the slow cooker.
2. Pat chicken thighs dry and season both sides with salt, pepper, thyme, and rosemary. Layer them over the vegetables.
3. Add the smashed garlic cloves over the chicken. Pour in the chicken broth and drizzle olive oil over the top.
4. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender and vegetables are cooked through.
5. Gently stir everything before serving to combine the flavors. Serve warm and enjoy.
