Ingredients

1 cup unsalted butter

1 cup brown sugar

0.5 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 tablespoon molasses

1.5 cups all-purpose flour

1 teaspoon baking soda

0.5 teaspoon salt

1 teaspoon ground cinnamon

0.5 teaspoon ground nutmeg

3 cups old-fashioned rolled oats

1 cup marshmallow fluff

0.5 cup unsalted butter, softened

1.5 cups powdered sugar

3 tablespoons eggnog


Instructions

1. Cream the butter, brown sugar, and granulated sugar until light and fluffy.

2. Beat in the egg, vanilla extract, and molasses until fully combined.

3. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.

4. Gradually add the dry mixture to the wet, then fold in the oats until fully incorporated.

5. Preheat oven to 350°F and line baking sheets with parchment paper.

6. Scoop tablespoon-sized dough onto the sheets, spacing them 2 inches apart.

7. Bake for 10–12 minutes until edges are golden, then let cool on a rack.

8. In a clean bowl, beat marshmallow fluff and softened butter until smooth.

9. Add powdered sugar and eggnog gradually and beat until fluffy.

10. Spread eggnog filling on the flat side of half the cookies.

11. Top with remaining cookies to create sandwich pies.

12. Press gently to spread the filling evenly to the edges.

Notes

Store in the fridge for up to 5 days in an airtight container.

Use old-fashioned oats for best chewy texture, not quick oats.

For extra flair, roll edges in crushed peppermint or drizzle with caramel.
