Description

Ingredients

1 ¾ cups all-purpose flour

¾ cup brown sugar

¼ cup granulated sugar

¾ cup unsalted butter (softened)

1 large egg

1 teaspoon vanilla extract

½ teaspoon baking soda

1 teaspoon ground cinnamon

¼ teaspoon nutmeg

¼ teaspoon salt

½ cup white chocolate chips (optional)

½ cup chopped pecans (optional)


Instructions

1. In a large mixing bowl, beat the unsalted butter, brown sugar, and granulated sugar together until light and fluffy, about 2 to 3 minutes.

2. Add the egg and vanilla extract, mixing until fully combined.

3. In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.

4. Gradually add the dry ingredients into the wet mixture, mixing until just combined.

5. Gently fold in the white chocolate chips and chopped pecans if using.

6. Scoop dough into 1.5 tablespoon portions and place them on a parchment-lined baking sheet, spacing them 2 inches apart.

7. Bake at 350°F for 9 to 11 minutes, until the edges are golden and centers are slightly soft.

8. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

These cookies freeze well — just scoop the dough and freeze unbaked.
