Description
Easy Valentine’s Day Strawberry Cookies are soft, chewy, and packed with sweet strawberry flavor in every bite. Made with freeze dried strawberries for a naturally pink color, these festive strawberry cookies are perfect for Valentine’s Day parties, gifting, or an easy homemade dessert any day of the week.
Ingredients
1 3/4 cups all purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 large egg yolk
2 teaspoons vanilla extract
1 cup freeze dried strawberries, crushed
3/4 cup white chocolate chips (optional)
Instructions
1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
2. In a medium bowl, whisk together the flour, baking powder, and salt.
3. In a large bowl, beat the softened butter and sugar until light and fluffy, about 2 to 3 minutes.
4. Add the egg and egg yolk, then mix in the vanilla extract. Scrape down the bowl.
5. Stir in the crushed freeze dried strawberries and white chocolate chips if using.
6. Add the dry ingredients to the wet ingredients and mix just until no dry flour remains.
7. Chill the dough for 30 minutes so the cookies bake up thicker and softer.
8. Scoop about 1 1/2 tablespoons of dough per cookie onto the baking sheets, leaving space between each one.
9. Bake for 10 to 12 minutes, until the edges look set and the centers still look slightly soft.
10. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For the strongest strawberry flavor, use freeze dried strawberries and crush them into small bits, not powder.
If the dough feels sticky, chill it a little longer and lightly dampen your hands when rolling scoops.
For extra Valentine flair, press a few extra strawberry bits or white chocolate chips onto the tops before baking.
