Description

Soft and spiced Eggnog Cookies are the perfect holiday dessert. Made with real eggnog, warm spices, and a sweet glaze, these festive cookies are great for Christmas trays and holiday gifts. A must-try seasonal cookie recipe for eggnog lovers.


Ingredients

1 ¾ cups all-purpose flour

½ teaspoon baking powder

½ teaspoon ground nutmeg

¼ teaspoon ground cinnamon

¼ teaspoon salt

¾ cup unsalted butter, softened

½ cup granulated sugar

¼ cup brown sugar

1 large egg yolk

½ cup eggnog

1 teaspoon vanilla extract

½ teaspoon rum extract (optional)

1 cup powdered sugar (for glaze)

2 to 3 tablespoons eggnog (for glaze)


Instructions

1. Preheat your oven to 350°F and line baking sheets with parchment paper.

2. In a medium bowl, whisk together flour, baking powder, nutmeg, cinnamon, and salt.

3. In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.

4. Add egg yolk, vanilla extract, rum extract (if using), and eggnog to the butter mixture. Beat until smooth.

5. Gradually stir the dry ingredients into the wet ingredients until just combined. Do not overmix.

6. Drop spoonfuls of dough onto the prepared baking sheets, spacing them 2 inches apart.

7. Bake for 10–12 minutes, or until the edges are lightly golden. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

8. For the glaze, mix powdered sugar with 2 to 3 tablespoons of eggnog until smooth. Drizzle over cooled cookies and let set.

Notes

Store cookies in an airtight container for up to 5 days.

Freeze unglazed cookies up to 2 months; glaze after thawing.

For extra holiday flair, sprinkle a pinch of nutmeg over the glaze.
