Description

Ingredients

1 cup eggnog

1/2 cup milk

2 large eggs

1 cup all-purpose flour

1 tablespoon melted butter

1/2 teaspoon vanilla extract

1/8 teaspoon salt

Butter for cooking (as needed)


Instructions

1. Add eggnog, milk, eggs, flour, melted butter, vanilla extract, and salt to a blender. Blend for 15–20 seconds until smooth. Let the batter rest for 30 minutes or overnight in the fridge.

2. Heat a nonstick skillet over medium heat and lightly grease it with butter.

3. Pour 1/4 cup of the batter into the skillet, tilting the pan to coat the bottom evenly.

4. Cook for 1–2 minutes until the edges lift and the bottom is golden.

5. Flip and cook the other side for 30 seconds to 1 minute.

6. Transfer to a plate and repeat with the remaining batter.

7. Serve with your favorite toppings like powdered sugar, whipped cream, fruit, or Nutella.

Notes

Let the batter rest to ensure tender, smooth crêpes.

Use a nonstick pan or well-seasoned crêpe pan for best results.

You can freeze leftovers between parchment sheets for later.
