Ingredients

4 medium beets 2 ripe avocados 4 tablespoons crème fraîche 3 tablespoons chopped pistachios 2 tablespoons olive oil 1 teaspoon flaky sea salt ¼ teaspoon freshly ground black pepper 1 teaspoon lemon juice


Instructions

1. Preheat oven to 400°F. Wrap beets individually in foil and roast on a baking sheet for 45–60 minutes until tender. Cool slightly, peel, and cut into wedges. Cut avocados in half, remove the pit, and slice into thin wedges. Drizzle lemon juice to prevent browning. Arrange beet wedges and avocado slices on a serving plate. Add dollops of crème fraîche and sprinkle with chopped pistachios. Drizzle with olive oil, season with sea salt and black pepper, and serve immediately.

Notes

Choose ripe but firm avocados to keep them from turning mushy. You can roast the beets a day ahead to save time. Golden and chioggia beets make a colorful variation.
