Ingredients
12 oz cheese tortellini
1 lb ground beef
3 cups fresh spinach
4 tbsp butter
4 cloves garlic, minced
1 small onion, chopped
1 tsp Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
1/3 cup grated Parmesan cheese (optional)
Instructions
1. Bring a large pot of salted water to a boil and cook the tortellini according to package instructions. Drain and set aside.
2. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat and transfer the beef to a plate.
3. In the same skillet, melt butter over medium heat. Add minced garlic and chopped onion. Sauté until fragrant and onion is soft, about 3 minutes.
4. Stir in Italian seasoning, salt, and pepper.
5. Add the beef back into the skillet and stir to combine with the garlic butter mixture.
6. Toss in the cooked tortellini and spinach. Stir until spinach is wilted and everything is well coated in sauce.
7. Serve hot, topped with grated Parmesan cheese if desired.
Notes
This dish reheats beautifully with a splash of broth or water.
You can substitute ground turkey or Italian sausage for the beef.
Frozen tortellini works just as well as fresh—no flavor lost.
