Ingredients
2 ½ cups all-purpose flour
1 cup unsalted butter, cold and cubed
½ teaspoon salt
6 tablespoons ice water
6 cups apples, thinly sliced (Granny Smith and Honeycrisp mix)
⅓ cup granulated sugar
¼ cup brown sugar
1 teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
1 tablespoon lemon juice
1 tablespoon cornstarch
1 egg, beaten (for egg wash)
Instructions
1. In a large bowl, mix flour and salt. Add cold butter and cut in until mixture resembles coarse crumbs.
2. Gradually add ice water and mix until dough comes together. Divide into two discs, wrap, and refrigerate for 1 hour.
3. Peel and slice apples. Toss them with granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Let rest 15 minutes.
4. Roll out one disc of dough and place in a 9-inch pie dish. Add apple filling, mounding slightly in the center.
5. Roll out the second disc and lay over the top. Crimp edges to seal and cut slits for steam.
6. Brush the top with beaten egg and sprinkle sugar if desired.
7. Bake at 400°F for 20 minutes, then reduce to 375°F and bake for 35–40 minutes until golden and bubbling.
8. Let pie cool for at least 2 hours before slicing to allow the filling to set.
