Ingredients
1 cup creamy peanut butter
2 large eggs
1/2 cup brown sugar
1 teaspoon vanilla extract
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chocolate chips
Instructions
1. Preheat the oven to 350°F and line a 12-cup muffin pan with paper liners or lightly grease the cups.
2. In a large mixing bowl, stir together the peanut butter, eggs, brown sugar, and vanilla extract until smooth.
3. Add the baking soda and salt, then mix until the batter is fully combined.
4. Fold in the chocolate chips gently so they are evenly distributed.
5. Divide the batter evenly among the muffin cups, filling each about three quarters full.
6. Bake for 15 to 18 minutes, or until the tops are set and a toothpick inserted in the center comes out mostly clean.
7. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
These muffins are best made with creamy peanut butter for the smoothest texture.
Do not overbake them or they can lose some of their soft, moist center.
You can leave out the chocolate chips for a more classic peanut butter muffin.
